Playing high school basketball for St. Patrick's in Ballarat, a country town in Victoria, Sobey moved overseas to represent Cochise College in Arizona from 2010-12.
He then played in college at the University of Wyoming, playing for the Cowboys from 2012-14 before returning home to play for the Ballarat Miners in the 2014 SEABL season.
Sobey began his full professional career in 2014/15 with the Cairns Taipans in the NBL and then made the move to the Adelaide 36ers where he signed a three-year deal.
In 2016–17, he averaged 15.5 points, 5.1 rebounds, 4.1 assists, and one steal per game to be named the NBL's Most Improved Player as well as reaching the All-NBL Second Team.
In that off-season, he joined Greek club PAOK while also being invited to the Utah Jazz's mini-camp in June 2017.
He impressed, signing to play with Utah's Summer League team before returning home to play for the 36ers for the 2017/18 season.
Sobey was then named to the Boomers squad ahead of the Asia Cup but missed the tournament due to injury. Fully healed, the guard then made his international debut in the FIBA World Cup qualifiers.
